A quick easy smoothie that gives you a big hit of Vitamin C. This one has pineapples in abundance, teamed with coconut water and fresh zingy root ginger – a great combo as part of your healthy pregnant diet.
Ingredients
One cup of fresh (or tinned) pineapple roughly chopped
Approx 1” of fresh root ginger grated
Coconut water
A handful of ice
Sprig of mint
Method
Put the chopped pineapple and root ginger into your smoothie maker and add enough coconut water to cover. Add a few cubes of ice and whizz until smooth.
Pour into a glass, decorate with a sprig of mint and enjoy.

- One cup of pineapple contains more than 130% of your daily Vitamin C needs
- Pineapples have a high fibre content so can aid digestion
